The first phase of maintenance tracking is simple logging of maintenance done. There is a lot more to come in this area. Keep a watch in the feature queue forum for what's coming.
To log maintenance on an aircraft go to the aircraft menu:

Then select the aircraft you want to want to "maintain" and click the wrench and driver icon:

After that it works just like the other features you already know how to use, and you end up with this:
